The Scottish Premiership club agreed a fee for the highly-rated 18-year-old, believed to be around £3m, and he flew out to Portugal to finalise a move to Lisbon.
United had tried to hold onto the Scotland U21 international and rewarded him with a new deal in December, but could not turn down a big-money offer.
Gauld broke into the first-team last season, earning the nickname 'Mini Messi' with some impressive displays for the Terrors and had been linked with Real Madrid, Roma and Manchester United.
He returned to pre-season training with his United team-mates on Monday, but is preparing for a new career on the continent after his switch to Sporting.
