Olympic champion Joshua was due to face the Argentinian on the undercard of the Carl Froch-George Groves bout in Manchester, just nine days after beating Croatia's Hrvoje Kisicek in London.
But he has had to shelve those plans and his next action will now come on December 14, back in London against Welshman Dorian Darch.
Joshua wrote on Twitter: "Got a mild shoulder injury, the medical team have advised me to rest. I cant argue. Time to re focus for Dec14th! Until next time Manchester.
"It's nothing major. i just have to listen to 2 professional advise (sic)."
