The unbeaten Liverpool fighter needed just a minute and five seconds to put away his Ghanaian opponent in in front of a home crowd at the Olympia.
Akrong was dropped by a left hook just seconds into the contest and, although he managed to beat the count, he looked to be on unsteady legs and an early finish was already on the cards.
Fielding swarmed in with lefts and rights, with the referee eventually stepping in as a defenceless Akrong fell back against the ropes.
"He comes to have a tear-up but I (planned) to just stick to my boxing, using angles and moving side-to-side," Fielding, who improved to 16-0, told Sky Sports.
"That's was what I was planning on doing, but I caught him."
Callum Smith, another exciting super-middleweight prospect from Liverpool, also made quick work of his opponent as he stopped former Prizefighter winner Patrick Mendy inside a round.
The win saw Smith, who is now 8-0 and has not gone beyond a round in his last six fights, take the English title which was recently vacated by Fielding.
